Methi Puri

                               Methi Puree


Ingredients
  • 1/2 kg green Methi or Fenugreek
  • Green chili 4
  • Garlic 1 flower
  • Oil
  • Wheat flour for 4 people
  • Besan or gram flour 2 serving spoon
  • Ajwain
  • Til
  • Fennel
  • Jeera powder
  • Salt
  • Turmeric
Procedure
  • Separate methi leave, wash and chop them finely
  • Heat oil add
  • Paste of garlic and green chili, golden fry it
  • Add chopped methi
  • Dry its excess of water
  • Take wheat flour + Besan
  • Add 2 tbsp of oil
  • Fennel powder
  • Jeera powder
  • Ajwain
  • Turmeric and salt to taste.
  • Kneed the Atta tight
  • Keep it for Half an hour.
  • Prepare a small Pedas for making puree.
  • Heat the oil
  • Start frying Purees.

Ingredients
  • Mushroom
  • Garlic
  • Maida
  • Butter
  • Black Pepper
  • Salt
  • Milk

Procedure
  • Chop Mushroom in fine pieces
  • Crush and chop garlic 1 flower
  • Heat butter in pan 
  • Add garlic
  • Add mushroom
  • Salt and Black pepper
  • Add two bowls of water
  • After boil
  • Add 2 bowls of milk
  • Add maida dissolved in water
  • After the soup is thickened serve.
Eat with

                   Sweet Corn Vegetable Soup


Ingredients
  • Sweet Corn Knorr packet
  • Salt
  • Carrot
  • Peas
  • Sweet Corm
  • Spring Onion
  • Water
  • butter extra Vargin olive oil
  • 1/2 T.S.F Sugar

Procedure
  • Saute all vegetables in butter after boiling them

Palak Soup

                          Spinach / Palak Soup

Introduction
Good for bones, eyes, immune system, rich in iron, Palak soup is highly beneficial for health and very simple to make. Sauté onion, garlic in butter along with peppercorn, add a bunch of spinach, water and cook for some time. Blend this mixture. Add milk and again boil. Add seasoning and serve. Try this healthy पालक का सूप. Palak soup is not only healthy but also tasty. Try fresh, warming soup, to make the most of fresh Spinach.
Ingredients 2 large bunches of spinach leaves 6 tsps butter 2 tbsps finely chopped garlic 6-8 black peppercorns 1 medium onion, chopped 4 tsps whole wheat flour (gehun ka atta) Salt to taste ½ cup milk Crushed black peppercorns to taste Breadsticks to serve Procedure 1. Heat 4 tsps. butter in a non-stick deep pan. Add garlic, black peppercorns and onion and sauté till translucent. 2. Add whole wheat flour and mix well. Cook for 1 minute. 3. Add 2½ cups water, mix and let the mixture come to a boil. Add the spinach leaves, mix and cook for 1-2 minutes. Add 1½ cups water and salt and mix well. Cook till it comes to a boil. Switch the heat off and blend till smooth using an electric hand beater. 4. Switch the heat on and cook till the soup comes to a boil. 5. Add remaining butter and milk and mix well. Add crushed black peppercorns, mix and cook till the soup comes to a boil. 6. Transfer the soup into individual serving bowls. Garnish with crushed black peppercorns and serve hot with bread sticks.

Tips
Serve hot with bread sticks


Put Palak at last to boil
Prefer small leaves
blanch it or dip it in hot water
Just blanch spinach do not excessively boil then to maintain a green colour.
Use the stock of spinach for extra nutrition
Use less salt in soup.
To counteract the taste of Palak we use onion and  milk (plain)
Its a complete meal in itself.

  • 1 onion
  • Garlic

  • Dry coconut
  • Peanut

Procedure
  • Fry all ingredients in oil in slow flame.
  • Add dry masala salt, red chilly powder, turmeric, coriander powder, jeera powder
  • Slit baigan 
  • Grind the masala
  • Pour oil in pan
  • add masala
  • Then add brinjal
  • Sprinkle green coriander at last

Hakka Noodles

                         Hakka Noodles


Ingredients
  • Sippy Hakka Noodles
  • 2 Tbsp Sesame oil
  • 1tbsp minced garlic
Procedure
  • Take Plenty of water in the pan (in less water noodles will try ti stick together due to starch content)
  • Pan in which water boiling
  • Cut the noodle into two and put it in boiling water
  • Add oil in it. (This oil coats the noodles when you drain the water)
  • Let this boil 10-15 minutes
  • Break the noodles with knife.
  • Noodles become soft 
  • Pick up one noodle and taste
  • Strain the noodle in running water, pour more cold water over it, for ot to cool down immediately.
  • Water should not be boiling it should have light bubble on the side.
  • Chop the vegetables 
  • Carrot in long  Julian's, Cut the carrot, slice it of 2 inches,  place them one top of other, hold your knife and cut it and then cut longitudinally.
  • Capsicum thin long, trim it, place one and the top of other and cut
  • Slice the  Cabbage, cut in two and Just separate the layers of cabbage,place cabbage one above other and crush a bit.remove the flaps cut in long thin shapes. Then cut it.(not very fine.)because cabbage is cooked very fast.
  • Bean sprouts
  • Spring onion, Keep the greens for the garnish when we toss, and onions for the sorte. Slice it longitudinally.
  • Toss all 
  • Pour oil in pan
  • Add little bit of garlic
  • And spring onions
  • It has to be done on high flame
  • Add carrot and Capsicum, and cabbage
  • Add salt to taste.
  • Add black pepper
  • Toss all the vegetables
  • Add some Soya sauce 1 tsf if you do not want dark colour.
  • Add come beans sprouts to this
  • Add all the noodles.
  • Just have to toss it.Either shake or raise it.
  • Keep on tossing it.And the noodles will be done.
  • Garnish
  • Cut the spring onion green diagonally. Just hold it on angle and keep on slicing it.
Serve it with chilly chicken
Or veg Manchurian.

  • Wet Coconut
  • Channa Dal Roasted and soaked
  • Curd

  • Kadhi patta 15 leaves
  • Red chillies 4
  • Salt
  • Mustard seeds.

Procedure
  • Roast  Channa dal in slow flame. Soak it in water
  • For Grind add coconut,
  • Green Chillies+ginger.+salt
  • Add 3-4 tsp water
  • Take a bowl, Add curd and mix +water+salt
Tempering
  • Heat oil
  • Add mustard seeds
  • Kadhi Patta
  • Red big chillies
  • Add tO chutney.

Ingredients
  • Soft milky corn 4 Kg ( or 6 bhutta for 2 people)
  • Onions
  • Ginger
  • Garlic
  • Green Chilies
  • Cooking Oil
  • Green coriander
  • Lemon
  • Grated Coconut
  • Dry Masala :Salt, turmeric, red chili powder,
  • Cumin, mustard seed
Procedure
  • Soak the corn overnight in milk
  • Grate in the morning
  • Finely chop onions
  • Peel garlic and mesh
  • Mesh green chilies
  • Mesh ginger
  • Finely chop green coriander for garnishing
  • Grate coconut for garnishing
  • Heat the oil 
  • Add cumin, mustard seeds ,
  • Meshed garlic chopped onions
  • Meshed chilies
  • Grated & meshed ginger
  • After they are golden brown add dry Masala
  • Salt,turmeric,coriander powder, 
  • Add grated corn.fry till they are crisp.
  • Add lemon juice.

Garnishing
  • Garnish it with green coriander
  • And grated coconut.

Ingredients

For 4 people
  • White Bread
  • 1 Mushroom (1 packet), 2.Corn (1 packet), 3. Simla Mirch (4) and onion (2)
  • Mayonnaise
  • Cheese Slice 
  • Butter
  • Salt
  • Black Pepper
Procedure
  • Chop Capsicum, mushrooms and onions  into small sizes 
  • Microwave for 6 minutes Capsicum,corn and mushroom.
  • Remove the excess water from batter.
  • Add onions in it.
  • Mix 2 tbsp Mayonnaise in it 
  • Add salt and black pepper in it.
  • Prepare the sandwich :
  • Add a layer of batter over white bread
  • Add cheese slice over it.
  • Preheat the sandwich maker 
  • Add prepared sandwich in it.
  • Roast it with butter.
Tips
  • Serve sand witch with sauce or green chutney

Palaka Paneer

Ingredients
  • Palak 1 Kg
  • Paneer
  • Malai or Creame 1/2 cup or 1 glass milk
  • 2 Big size Onions + Garlic 1 flower
  • Ginger + 2 Tomatoes + Green chill 2
  • Garam masala
  • Jeera powder, coriander powder, red chilli, salt 
Procedure
  • Soak paneer in warm water for 5 min, then fry
  • Remove Palak  leaves + wash + boil (1 whistle) + grind 
  • Grind onion and garlic
  • Grind tomatoes + garlic + green chilli
  • Heat oil in kadhai,
  • Add Jeera
  • Paste of onion + garlic fry
  • Paste of tomatoes + ginger + 2 green chilli fry
  • Add dry masala Jeera powder, coriander powder, red chilli, salt.
  • Garam masala
  • Add paste of Palaka, stir fry
  • Add fried Paneer
  • Cream / Malai or / 1 small glass milk

  • 100 gram Green coriander
  • 4 green chilies
  • 4 pieces garlic
  • 1 small Onion
  • Raw mango
  • 1 mango raw
  • 1 spoon chat Masala
  • salt to taste
  • 1/2 spoon black salt
  • Fried Jeera powder

PROCEDURE
  •  Mix all ingredients in  grinder.
  • Add salt
  • Store it in refrigerator.

Procedure
  • Soak paneer in warm water for 5 minutes
  • Keep the peas ready fresh ones.
  • Chop onions and keep the garlic paste ready fry then
  • Keep tomato and ginger paste ready + green chilli fry them
  • Add dry masala salt,red chili powder, turmeric,jeera powder,coriander powder.
  • Add Matar in it
  • Add soaked paneer
  • Add Chana masala

Veg Birayani

                   Vegetable Biryani


Ingredients
  • Basmati Rice
  • Biryani Masala 
  • or Coriander powder, Jeera powder, kitchen masala, channa masala
  • Bay leaves, cloves, black pepper, Cardemum, small and big,  star anise
  • 1 cup curd / or Venegar
  • Vegetables : Carrot, Cauliflower, peas, capcicim, Beans, 
  • 3 big Onion, garlic, ginger paste.Green chillies 3 or 4
  • Ghee for garnishing
  • Crispy onions for garnishing
  • Cashew Nut
  • Cooking oil
  • Garam masala
Preparations
  • Wash rice
  • Boil water 
  • Add oil 2 tbs, salt, 
  • Cardamom small and big both, clove, black pepper, bay leaves, cinnamon, star anise,
  • After the water comes to boiling temp add rice in it.
  • Venagar (optional)
  • Switch off the flame after rice is half cooked.
  • Remove the rice in strainer and keep it aside.
  • Chop 2 big onion big C shape
  • Heat oil add Jeera and onions, crisp fry them
  • Prepare ginger + Garlic paste
  • Chop all the vegetables
  • Chop 1 onion
  • finely chop carrot
  • Fry cashew crispy
Procedure
  • Heat oil in Kadhai
  • Add chop onions
  • Add garlic and ginger paste
  • Add chopped vegetables carrot, cauliflower,beans, later on peas and beans.
  • Add dry masala like biryani masal or kitchen masala, chana masala, jeera powder, coriander powder, red chilli powder,turmeric optional And salt.
  • Add chopped Capcicum and peas later on
  • Add curd (optional)
  • Add boiled rice and mix  
  • Add fried cashew later on
  • Add Ghee at last
Tips
  • Ghee for garnishing
  • Crispy onions for garnishing at the time of serving
  • Fried cashew nuts  for garnishing
  • Eat with curd

Ingredients
  • 2 Packet medium size prawns
  • 2 flower of garlic
  • Green coriander
  • 3 Green chilies
  • Ginger
  • Oil for shallow frying
  • 4 Table spoon  gram flour
  • 2 Table spoon Maida
  • Salt,turmeric
  • Red chilli powder
  • Coriander powder

Procedure
  • Defrost and wash the prawns
  • Green coriander, garlic, green chilies,ginger make its paste in grinder
  • Take the prawn on a bowl
  • Add sait to it 
  • Add the above paste
  • Add dry spices turmeric, red chili powder,coriander powder
  • Add besan to it 
  • Mix it properly
  • Marinate for two hours
  • Shallow fry the prawns in a pan.
Tips
  • Serve it hot with plain rice,dal and mint chutney

Tomato Soup

Try this Tomato soup rich in antioxidants, vitamin C and E. It is very good for heart patients. In this recipe carrots are added to make it more healthy. This tomato soup has a creamy texture and is very tasty. You can add cornflour to make your soup thick.
Ingredients
  • 10-12 or (1 kg) Tomatoes (half desi + Half hybrid
  • Olive oil + Butter
  • 2 Carrots
  • Bay leaves
  • 1 Flower Garlic
  • Salt
  • Black Pepper full
  • Celery
  • Milk Cream 
  • 1 Potato
  • 2 Tablespoon boiled Rice
  • 1 beetroot (optional)
  • Garlic
  • 1 onion
Procedure
  • Add Olive Oil
  • Add butter
  • Chop tomatoes
  • Add sliced onions
  • Bay Leaf
  • Salt 2 Tsf
  • Add Celeries
  • Add chopped carrot
  • Add chopped garlic
  • Add tomatoes
  • 1 grated potato
  • 2 -3 Tablespoon soaked Rice
  • 1 Beetroot
  • Add water in pressure cooker
  • Cool it and blend the mixture  in grinder.
  • Add salt and crush pepper
  • Add 2 tsf Sugar
  • Remove Bay leaves before grinding
  • Strain the soup
  • Heat the soup
  • Taste for salt content
  • Prepare bread crumbs
  • Blend tomato mixture
  • Add salt
  • Add crushed pepper
  • Add sugar 2 Tsf
  •  Add cornflour
  • Add 2-3 tsf of cream don't over boil after that


For Cutons
  • Slice bread
  • Deep fry
  • or dry roast
  • or microwave
For thickening
  • 1-2 tsf Rice
  • 1 Potato
  • or cornflour

Tips
  • Remove Bay leaves before grinding
  • Add fresh cream at last.
  • Serve hot piping soup in a bowl
  • Garnish it with a cream
