Hakka Noodles
- Sippy Hakka Noodles
- 2 Tbsp Sesame oil
- 1tbsp minced garlic
Procedure
- Take Plenty of water in the pan (in less water noodles will try ti stick together due to starch content)
- Pan in which water boiling
- Cut the noodle into two and put it in boiling water
- Add oil in it. (This oil coats the noodles when you drain the water)
- Let this boil 10-15 minutes
- Break the noodles with knife.
- Noodles become soft
- Pick up one noodle and taste
- Strain the noodle in running water, pour more cold water over it, for ot to cool down immediately.
- Water should not be boiling it should have light bubble on the side.
- Chop the vegetables
- Carrot in long Julian's, Cut the carrot, slice it of 2 inches, place them one top of other, hold your knife and cut it and then cut longitudinally.
- Capsicum thin long, trim it, place one and the top of other and cut
- Slice the Cabbage, cut in two and Just separate the layers of cabbage,place cabbage one above other and crush a bit.remove the flaps cut in long thin shapes. Then cut it.(not very fine.)because cabbage is cooked very fast.
- Bean sprouts
- Spring onion, Keep the greens for the garnish when we toss, and onions for the sorte. Slice it longitudinally.
- Toss all
- Pour oil in pan
- Add little bit of garlic
- And spring onions
- It has to be done on high flame
- Add carrot and Capsicum, and cabbage
- Add salt to taste.
- Add black pepper
- Toss all the vegetables
- Add some Soya sauce 1 tsf if you do not want dark colour.
- Add come beans sprouts to this
- Add all the noodles.
- Just have to toss it.Either shake or raise it.
- Keep on tossing it.And the noodles will be done.
- Garnish
- Cut the spring onion green diagonally. Just hold it on angle and keep on slicing it.
Serve it with chilly chicken
Or veg Manchurian.
