Veg Birayani

                   Vegetable Biryani


Ingredients
  • Basmati Rice
  • Biryani Masala 
  • or Coriander powder, Jeera powder, kitchen masala, channa masala
  • Bay leaves, cloves, black pepper, Cardemum, small and big,  star anise
  • 1 cup curd / or Venegar
  • Vegetables : Carrot, Cauliflower, peas, capcicim, Beans, 
  • 3 big Onion, garlic, ginger paste.Green chillies 3 or 4
  • Ghee for garnishing
  • Crispy onions for garnishing
  • Cashew Nut
  • Cooking oil
  • Garam masala
Preparations
  • Wash rice
  • Boil water 
  • Add oil 2 tbs, salt, 
  • Cardamom small and big both, clove, black pepper, bay leaves, cinnamon, star anise,
  • After the water comes to boiling temp add rice in it.
  • Venagar (optional)
  • Switch off the flame after rice is half cooked.
  • Remove the rice in strainer and keep it aside.
  • Chop 2 big onion big C shape
  • Heat oil add Jeera and onions, crisp fry them
  • Prepare ginger + Garlic paste
  • Chop all the vegetables
  • Chop 1 onion
  • finely chop carrot
  • Fry cashew crispy
Procedure
  • Heat oil in Kadhai
  • Add chop onions
  • Add garlic and ginger paste
  • Add chopped vegetables carrot, cauliflower,beans, later on peas and beans.
  • Add dry masala like biryani masal or kitchen masala, chana masala, jeera powder, coriander powder, red chilli powder,turmeric optional And salt.
  • Add chopped Capcicum and peas later on
  • Add curd (optional)
  • Add boiled rice and mix  
  • Add fried cashew later on
  • Add Ghee at last
Tips
  • Ghee for garnishing
  • Crispy onions for garnishing at the time of serving
  • Fried cashew nuts  for garnishing
  • Eat with curd
  • Salad
  • Mint Chutney 
  • Chilly pickle
